gummy shark $20
more of that Jason Scimone loveliness, a local fisherman of many years who fishes from Bunbury to Esperance, chasing the best he can catch. Gummy shark is a softer, finer flesh, very white and milder in flavour to other shark species
dhufish $35
line caught Hamelin Bay, the colder waters down this way produce some superb white, moist flesh due to the slightly higher fat content, best examples I can find.
flathead $20
simply ugly, but darn tasty, Denmark flathead, great battered or panko crumbed, a very flakey semi firm fish, C.B. Smith
