This large fish has a flattened shape, with both eyes on one side and a distinct tail. It is a master of disguise and can rapidly change the colour of its upper body to match its surroundings. This fish is common in estuaries and bays of Western Australia, including Swan Estuary Marine Park and Walpole and Nornalup Inlets Marine Park. Flounder is a mild-tasting fish with a slightly sweet undertone. Its texture is delicate and fine with low levels of oiliness and moisture

They are also excellent crumbed (or battered) and then pan-fried or deep-fried for perfect fish and chips. The firm moist flesh will fall easily away from the bones, making them easy to serve and eat, flaky, moist sweet flesh, best panko crumbed or crispy battered
